Trois Fleches is a hidden restaurant where authentic steaks grilled in a Kishu binchotan charcoal oven take center stage. The exterior is savory and crisp while the interior locks in the meat juices with exquisite doneness; you can enjoy a variety of cuts focusing on Wagyu and aged beef. Appetizers, fish dishes, and seasonal specialties are also prepared with care, and the well-balanced menu that doesn’t lean only toward meat is another characteristic. Their signature dish is authentic steaks — wagyu sirloin and fillet, aged beef, and rare cuts — grilled in a hearth over Kishu Binchotan charcoal, with a fragrant seared surface and a juicy interior. They also offer a wide variety of appetizers and fish dishes, shirako (cod milt) croquettes, seasonal small plates, and more, making the menu broad enough that you can enjoy the meal from start to finish, not just the meat.

Opened on July 25, 2011. Since then, it has earned a reputation by offering high-quality steaks and French cuisine suited to the character of the Ginza area. Hiromi Yamada

Chef Yamada, who hails from Asakusa, Tokyo, began his career in Italian cuisine at 18. After serving as head chef at several of the city's renowned restaurants, he opened "Ristorante Hiro" in 1995 and established himself as a skilled chef. He currently works as executive head chef for multiple outlets, pursuing new culinary expressions based on his original ideas and experience. His extensive technique and sensibility breathe life into his cooking and support the creation of each restaurant's flavors.
